It’s quick to assemble, pleasingly refreshing, and very spicy. The slightly tart flavor of the green papaya combines well with the spice of the Thai bird chilies and the saltiness of the fish sauce and stands out well on its own or as an awesome accompaniment fish or grilled protein.
