Creepy Halloween Cookies

For the cookies:

  • 1 cup butter, softened
  • 1/3 cup sugar
  • 1/2 cup light brown sugar
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 large egg yolk
  • 2 1/2 cups all-purpose flour
  • 1 cup semi sweet mini chocolate chips

Combine the butter and sugars. Blend until creamy. Add in the egg yolk and vanilla extract and mix. Gradually mix in the flour until creamy. Stir in the chocolate chips with a wooden spoon. The consistency of the dough will be dry, but malleable.

Using your hands, form the dough into a ball and lay it down on wax (or parchment) paper. Slice the dough ball in half, and form each half into a log. Wrap each log in wax (or parchment) paper and chill for at least one hour.

Preheat oven to 350 degrees.

Roll the chilled dough logs out until they're approx. 1/4 of an inch thick. Using cookie cutters, cut out desired shapes and place onto cookie tray (Silpat preferred).

Bake for 10 minutes, or until browned on the edges. Place on a rack to cool.

For the icing:

  • 1 tablespoon cream cheese, softened
  • 2-3 tablespoons milk
  • 1 1/2 cups confectioners sugar
  • food dye

Combine the cream cheese and the milk. Whisk until lump free. Gradually add the confectioners sugar, and mix until smooth.

Add food coloring to get desired colors and frost the cookies. Let the icing dry.
